Peppermint Bites

The husband and I often visit Pateley Bridge for a tasty pork pie from Mr Weatherheads. I like popping into the bakery on the main high street afterwards to satisfy my sweet tooth. One of the last times we went I bought some peppermint tiffin. Yummy! But I wondered if I could make my own variation. So this is it! A Colleague of mine swapped the peppermint for caramel which also worked.

Peppermint Bites

Ingredients
Base

200g Oreos Crushed
200g Milk Chocolate
100g Unsalted Butter
30g Golden Syrup

Filling

250g Ready Rolled Icing
3tsp Water
1 Tsp Peppermint Extract

Topping

200g Milk Chocolate
25g Unsalted Butter
15g Golden Syrup
1tsp Peppermint Extract

Method

    1. Line a 20cm square tin
    2. In a bowl melt the chocolate, butter and golden syrup (30 second blasts in the microwave followed by a quick stir – keep doing this until melted)
    3. Blitz biscuits in a food processor until crumbs
    4. Mix the melted chocolate with the crushed biscuits
    5. Spread into the square tin and put in the fridge to harden up
    6. Two methods to make filling:
      1. Make the filling by melting the icing over a bowl of hot water and adding in the water and peppermint extract
      2. Pop the icing and water into a microwaveable bowl and heat for 30 seconds. Stir mixture which should have turned gloopy and add peppermint extract.
    7. Pour filling on top of biscuit mix and level out
    8. Make chocolate topping by melting the ingredients together and spread evenly on to the filling. (Again can be done in the microwave)
    9. Chill in freezer to make it easier to cut
    10. Ready to serve

 

If peppermint isn’t what you like, then there’s a peanut variation. Swap out the filling and topping ingredients, then follow as above:

Filling

100g Ready Rolled Icing
150g Smooth Peanut Butter
4-5tsp Water

Topping

200g Milk Chocolate
25g Smooth Peanut Butter
15g Golden Syrup
